Chicken Fab Pho + Mapping Out Your Life + Fierce Fit Workout Video

Do you really know how you want to live your life? Or do you just take it day by day, get stuck in a rut and feel completely unsatisfied with how things are going for you? I get like this sometimes! I just feel like I am on a roller coaster ride and that I can't get control. I feel like I am always behind the eight ball. I feel like I am constantly chasing my tail. Sometimes I feel like this for weeks, sometimes months and sometimes days. The most important thing I have come to realise is how quickly I decide to pick myself back up again, sort my shit out and keep on trying. 

Over these past few years since being back in the fitness industry I have really worked on myself. I have introduced new habits, tested out different styles of training, eating and practised different mindfulness habits. I now know that I can't get this PERFECT!! And that no one else is perfect!

We all struggle with SOMETHING in our lives and I guess it's how quickly we can pick ourselves up and move forward. 

One of the things that have helped me is gratitude. I have been writing in my journal most mornings and I always write down the things that I am grateful for. Sometimes when I am feeling envious or down, I go back to being grateful for what I ACTUALLY DO have and I then start to feel pretty lucky and happy again. We are lucky to live in a great country, with food on our table, access to clean drinking water and having a toilet to sit on. 

The other thing that has recently helped me, and I actually have NOW realised that I have been doing without being conscious of is creating a vision or "mapping out" my life and how I want to live it.

I believe if we truly do want something we can make it happen. It may not come easy but this is when we need to get out of our comfort zone and change the things we are currently doing if we want to achieve great things. 

If I look back at the past 10 years I can honestly say the things that I wrote down on paper that I wanted to achieve actually did happen. I wasn't conscious of doing this but all these dreams came true by writing them down and taking action. 

Here are a few examples of the things I wrote down on paper: 

  • Open my own Beauty Salon/Spa - I had a vision, started small (in the back of a hairdressing salon) and eventually went on to open my own spa
  • Pay off my DEBT from my business (20k overdraft, 60K business loan, car debt & credit card) - I wrote it down in a notebook I had that I used for just jotting down my ideas while in my former business. I still have this notebook and I love looking back through it to see what was going through my mind at the time. I stopped using my overdraft, watched my spending & just increased all my loan repayments. It was the small habits that added up over a long period of time and I had them all paid off 
  • Started My Fitness Theory - my 8-week online training program - this was an idea on paper that came to life just by starting
  • Built my amazing home that we are lucky to live in

Chicken Fab Pho

Ingredients:

1 roasted chook - shredded (I used a store brought roast chook)

8 cups chicken bone broth

3 tbs fish sauce

3 tbs coconut aminos

2 tbsp grated ginger

6 cloves garlic, minced

1 red chilli, finely sliced

1 tbs coconut oil

2 zucchini, cut into zoodles or peeled

1 cup mushrooms, finely sliced

1 cup bean shoots

1 handful basil, chopped

1 handful coriander, chopped

Method:

Melt coconut oil in a pot on medium heat and cook ginger, garlic and chilli until soft. Add the broth, coconut aminos and fish sauce then bring to the boil and simmer for 5-10mins. 

In a bowl layer vegetables on the bottom followed by the chicken. Pour over the broth mix and top with the herbs.
